Peanut Butter Cake
2 Eggs
¼ Vegetable Oil
1/3 Cup Applesauce
1/3 Cup Peanut Butter
1 Carrot, Grated
1 Banana
2 TBSP Honey
1 Cup Flour
1 ½ tsp Baking Powder
Frosting
2 Cups Plain Greek Yogurt
¾ Cup Peanut Butter
Preheat oven to 350 degrees. Line the bottom of two 6 in cake pans with parchment paper and spray with cooking spray.
In a large mixing bowl, combine eggs, oil, applesauce, peanut butter, carrot, banana, and honey. Whisk until smooth.
Add flour and baking powder. Mix well.
Bake 28 to 32 minutes or until a toothpick inserted into the center comes out clean.
Cool in the pan for 10 minutes before putting on a cooling rack. Let cool to room temp before frosting.
To make the frosting, mix yogurt and peanut butter until light and fluffy (3 to 5 minutes).
To frost the cake, place a bottom layer on a cake board or serving dish. Cover the top with frosting and place the second layer on top. Cover entire cake with frosting and decorate as desired.
