Peanut Butter Cake

2 Eggs

¼ Vegetable Oil

1/3 Cup Applesauce

1/3 Cup Peanut Butter

1 Carrot, Grated

1 Banana

2 TBSP Honey

1 Cup Flour

1 ½ tsp Baking Powder

Frosting

2 Cups Plain Greek Yogurt

¾ Cup Peanut Butter

  1. Preheat oven to 350 degrees. Line the bottom of two 6 in cake pans with parchment paper and spray with cooking spray.

  2. In a large mixing bowl, combine eggs, oil, applesauce, peanut butter, carrot, banana, and honey. Whisk until smooth.

  3. Add flour and baking powder. Mix well.

  4. Bake 28 to 32 minutes or until a toothpick inserted into the center comes out clean.

  5. Cool in the pan for 10 minutes before putting on a cooling rack. Let cool to room temp before frosting.

  6. To make the frosting, mix yogurt and peanut butter until light and fluffy (3 to 5 minutes).

  7. To frost the cake, place a bottom layer on a cake board or serving dish. Cover the top with frosting and place the second layer on top. Cover entire cake with frosting and decorate as desired.
